Tomato, Cheese and Chickpea Salad

Yields: 4 servings


2 cups (500 mL) cherry tomatoes, halved

1 cup (250 mL) orange bell pepper, diced

1 cup (250 mL) yellow bell pepper, diced

3 1/2 oz (100 g) Canadian Mozzarella, diced

3 1/2 oz (100 g) Canadian Feta, diced

2 cups (500 mL) canned chickpeas, drained

2 shallots, finely chopped

1/4 cup (60 mL) chopped fresh basil

1/4 cup (60 mL) lemon juice, freshly squeezed

2 tbsp (30 mL) olive oil

Salt and pepper, to taste


Place cherry tomatoes, peppers, cheeses, chickpeas, shallots and basil in a salad bowl. Whisk together lemon juice and olive oil. Mix gently into salad. Season to taste.
